		<description>Hi Chefshop,  Good job on writing another interesting post.  We along with 5 teenagers, went to a Greek Restaurant today.  So seeing specialities from Greece was good.  In gourmet cooking, it was good to see how greek food has taken the olives and salads to the next level.</description>

Because they have a smoother texture, which adds to the experience in your mouth.  You might say, it's like driving a BMW, versus a Toyota.</description>
